• 1 lb (450g) boneless, skinless chicken breast or thighs (or turkey if you have it)
• 1 tablespoon olive oil or butter
• 1 medium onion, finely chopped
• 3 cloves garlic, minced
• 2 medium carrots, dice
• 6 cups chicken broth (preferably low-sodium)
• 1 cup heavy cream (or half-and-half for a lighter version)
• 1 teaspoon dry Italian seasoning
• Garlic powder to taste
• 1 teaspoon Greek seasoning
• Salt and pepper to taste
• 1 cup fresh spinach
• 1/4 cup dried tomatoes

How to Prepare

Sauté chicken with olive oil or butter in the soup pan.

Sauté the vegetables: In the same pot, add the chopped onion, garlic, and carrots. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften and the onion becomes translucent.

Simmer the soup: Add the chicken broth to the pot and bring it to a boil.
