Brisket is one of the most popular types of roasts to have, however as hunters, we miss out on this. The brisket is a fatty piece of meat from the breast of an animal. The average fat in a beef brisket is 20%. With wild game, this amount of fat very rarely happens, and the brisket cut is often small. To not miss out on this amazing meal, I learned about fake brisket.  We make this from a typical shoulder roast that is 1 – 2 pounds, pound it flat, then tenderize, season, and smoke.

Ingredients

1 – 2 Pound Leg Roast

2 Gringo's Chupacabra Rub Brisket Magic

Directions

Start by drying off the roast and placing it on a cutting board. You can then either use a tenderizing hammer or we have one that has a bunch of little tubes that tenderize and flatten. 

Cover both sides of your roast with the 2 Gringo's Chupacabra Rub Brisket Magic.

Then smoke on a pellet grill at 225°F until it reaches an internal temperature of 150°F. This takes about 2 hours. 

The 2 Gringo's Chupacabra Rub Brisket Magic has brown sugar as one of its ingredients. This combines with the heat and the juices to make a nice crust on the outside that keeps the meat moist and tender. This is one of the best brisket-like roasts I have tasted and it is ready way faster than traditional brisket.
